“The polyphenols in dark chocolate and the nutrients in the pistachios and cranberries provide a nutritional boost, moreso than other dessert options,” explains Jennifer Martin-Biggers, Ph.D., MS, RDN, VP of scientific affairs and education at HUM Nutrition. “Dark chocolate is lower in saturated fat than milk or white chocolate, and the pistachios provide healthier monounsaturated fats. There is also no additional sugar, thanks to the extra sweetness from the cranberries.”

The bark is also a versatile recipe that can be made on the stove or in the microwave, so wellness pros need not take too much time out of their busy schedules to prepare this sweet treat for their loved ones. Healthy Dark Chocolate Bark

Serves 10
- 6 oz. dark chocolate
- 1/4 cup raw pistachios
- 1/4 cup dried cranberries
- 2 Tbsp. shredded coconut
Line a baking sheet with parchment paper and set aside.
Microwave: Place chocolate in a microwave-safe bowl and microwave at 20% for 30 seconds, then stir. Repeat 4 or 5 times, microwaving and stirring until most of the chocolate has melted. Stir until fully melted and smooth.
Stovetop: Pour a few inches of water into a saucepan and top with a glass bowl. Over medium heat, bring water to a boil. Add 2/3 of the chocolate and melt, stirring until smooth. Remve from heat and stir in remaining chocolate.
Pour melted chocolate onto prepared baking tray, and spread to 1/8-inch thickness. While chocolate is still warm, sprinkle with cranberries, pistachios and coconut. Refrigerate for 15 to 20 minutes, or freeze for 10 to 15 minutes. Break the bark into pieces and serve. Store extra pieces in an airtight container at room temperature.
