New Flavorcon 2024 session alert! Let's talk about this new sweet/spicy, or "swicy," phenomenon. This concept has taken over snack food flavors and is spreading like wildfire. With that in mind, we decided to tap Kalsec principal flavorist Shane McDonald to share his insight on formulating for swicy products and consumer research behind the trend.
Swicy: The Fusion of Hot and Sweet
Consumers are enjoying the combination of sweet flavors and foods with hot, pungent spices, called "SWICY." A classic example is barbecue sauce! This presentation looks at market trends, recent examples in new products and menus, pungent raw materials, as well as advice from chefs in combining sweet and pungent to make exciting new food and flavor sensations.

Shane McDonald has a Ph.D. in Food Science from the University of Wisconsin-Madison. He is a certified flavor chemist and has been working in the flavor industry for over 25 years, mostly in savory flavors, reaction flavors, pungency and flavor for beer. McDonald has been at Kalsec for almost 14 years and is currently the principal flavor chemist.

Flavorists, get your education started early with this first-come first-served pre-Flavorcon session on Monday, October 7! This session will take attendees on a guided tour through a lineup of organoleptic materials with the help of Bell Flavor & Fragrances principal flavorist, Cyndie Lipka, and junior flavorist Michael Morrison as well as a second session featuring independent flavorist and “Flavor Bites” columnist, John Wright and PepsiCo junior flavorist Giuseppe Bongiorno. This session has an additional fee and lunch is included!
